The UK market for colours as an ingredient in food and drink is forecast to grow slowly from 1,322 tonnes in 2007 to 1,378 tonnes by 2012. However, as with many other areas of the food industry, the ability to use the term “natural” is now a necessity for both manufacturers and retailers.

As a result, beneath this relatively static total market we are seeing synthetic and nature identical colours lose out to natural colours, especially in soft drinks and confectionery.
