Flavour is a key component of food and drink. Over the years a wide range of flavours have been developed including natural, synthetic and nature identical. However, recent controversy has forced processors to eliminate synthetic and even nature identical flavours wherever possible. Although, as yet, many natural flavours are not suitable in certain applications, natural flavours are now taking an increasing share of the total UK flavours market. Currently, usage of natural flavours stands at 5,615 tonnes and growing at a rate of 4.4% per year (compared to 6,837 tonnes and -1.3% for synthetic and nature identical flavours). By 2012 RTS forecasts that the UK market for natural flavours will reach 6,551 tonnes driven by increased demand in soft drinks and confectionery and overtaking synthetic and nature identical flavours.
