UK demand for industrial seasonings, herbs and spices has been growing slightly ahead of the total food and drink market. The reasons for this above average performance are based mainly on two drivers: our increasing demand for prepared and convenience food coupled with an increase in the popularity of more highly flavoured foods. In 2007, total demand for industrial seasonings, herbs and spices totalled 101,000 tonnes, having grown from a volume in 2002 of 94,400 tonnes an annual average growth equivalent to 1.4%. Value in 2007 reached £197 million. These figures make this ingredient sector one of the most important in UK food
manufacturing.
